Here we go, another one for the books!
This recipe is probably floating around out there somewhere… but I had no idea about.
This Tropical Fruit Salad is full of amazing flavor with very little effort. The vibrant colors of the fruit not only lend themselves beauty, but to the fact that each of the fruits are highly nutritious.
Mama’s we don’t need to worry about money here. These fruits are truly not that expensive in the quantities provided. This will easily feed a family of 6 large portions of fruit salad.
Don’t skimp on feeding our precious ones. They need the good vitamins and minerals just as much as us. Besides, when all of these fruits are on sale at the same time, it really favors the budget!
You don’t need to eat it all week long. Just once for a nutritional power packed lunch or dinner side 🙂
Trim Healthy Mama’s this is an E. Make sure you read the directions carefully so you don’t go into crossover territory!
Tropical Fruit Salad ~ E
Serves 6-8 generous portions
1 1/2 mango’s peeled and diced
4 kiwis peeled and diced
1/2 pint or full pint strawberries stemmed and sliced
For the kids and dad:
1/2 cup finely shredded unsweetened coconut
1/4-1/2 cup finely chopped nuts (your choice, I used pecans)
For the Trim Healthy Mama still shedding some weight, pull our your portion of fruit BEFORE you add all that coconut and those nuts…. Sprinkle a little bit of nuts and a little bit of coconut flakes on your portion to keep within E guidelines.
Peel, dice, slice, chop…. and mix together!
YUMMY! Seriously like a sensational dessert!
I serve this up with Black Beans and Rice for lunch or my Amazing Almond Chicken Lettuce Wraps!
