Tomato soup is a staple in our house.
But I did’t know that it was so loved until about 2 years ago. Sitting around the table, talking about our favorite foods, my husband piped up and mentioned how he just loved tomato soup with grilled cheese. At the time we had been married 12 years and this was coming from the man who hates tomatoes… I mean hates them!!!
How does that happen? He doesn’t like ketchup and if there were tomatoes (all but sauce in spaghetti and pizza) in anything he wouldn’t eat it sometimes (early years) and then decided later he’d pick them out because of his love for me. He knew I loved them too much to not have them sometimes.
SO, I asked him how can he love such a soup? It’s like the sauces for him, it has no eyeballs ;)… If you didn’t know that before you do now. Tomatoes have eyeballs… their seeds. They have a weird texture to him… hence the aversion to all other things tomato!
When you think you know someone, you end up learning a little more. 🙂
So we started getting our tomato on! The kids new favorite soup… they could eat it everyday! I love tomatoes too, but not that much. BTW, if you eat too many tomatoes, you may see a change in your bodily functions… just sayin’.
On to the recipe….
For a good side of protein you can serve this with about 3 oz. of lean meat, some 0% greek yogurt, or some Laughing Cow Cheese wedges to make this creamy. If you aren’t sure how I can loose weight eating all this decadent food. You need to get the book Trim Healthy Mama and then you’ll understand why and what all those little acronyms mean. 😉 Do it, get it now.. you will thank me, I promise. This pic is with a wedge of light Laughing Cow cheese, YUM!
