How did I come up with this recipe?
Simple really, we were dairy free for a time and I had to!
Because the recipe that inspired me was so amazingly delicious that we needed to find something comparable to it.
Indeed, we did. We have!
My kiddos were in heaven when they had this the first time and have been every time since.
I was inspired by Trim Healthy Mama’s recipe found on page 373, called Cheesecake Berry Crunch. AMAZING!
We had missed that super easy and delicious recipe so much.
If you are choosing to reduce your dairy intake or are on any of the above mentioned diets, this recipe is for you.
Enter in the Dairy Free Version:
Coconut Cream Berry Crunch ~ S
2 – 3 Cups Almonds (we used soaked and dehydrated) (you may combine almond flour and almonds too)
2 – 4 cups frozen berry mix ( I use the 3 berry mix from Costco)
2/3 coconut cream (or also known as coconut butter… yummmmm)
2/3 cup full fat coconut milk
1/4-1/2 tsp celtic sea salt (or what you got!)
3 baby scoops of NOW stevia pure extract powder (or 3 shakes, or what you like)
1 tsp vanilla
Place all in the processor and pulse…
I like to make it chunky, my kids like it creamy…
I was going to roll it into balls and freeze it but I didn’t have time and that’s when I decided it would be fine as is! It was more like an ice cream when I pulsed longer!
This is one of the best things I have ever tasted and my daughter who doesn’t much care for coconut LOVED it 🙂
