I love this recipe!
I never did read a recipe on it… what inspired the recipe was a long ago view of a blog title. Stacy Makes Cents did a crock-pot chia seed preserve. I never read her recipe!
Because I wasn’t interested in using my crock-pot.
Don’t get me wrong, I love my crock-pot, but not for everything.
I like quick, easy and yummy! That is me.
So I came up with this recipe without truly viewing one like it, but titles do truly inspire at times, this was the time. 🙂
It took me about 7 months or so to decide to figure out how to make it! If I remember right that is.
I literally eat it out of the jar with the fridge door open.
It’s my dirty little secret… My kids come through the kitchen and ask what I am doing, back turned, I greedily eat it off the spoon. Shame on me!
It really is that good and get these numbers…
It makes 2 3/4 cup Preserves…
1.25 grams of carbs and .34 grams of fat per tablespoon!
Not any ol’ fat by the way but that good ol’ Omega 3 fat!
What a perfect preserve! Shameless! Sugar Free too! Thank you Trim Healthy Mama for teaching me.
Here is the recipe:
Stove-Top Chia Berry Preserve ~ FP
makes 44 tablespoons or 2 3/4 cups
5 cups of frozen mixed berries
(this time I used blueberry, strawberry and raspberry)
1/3 cup Chia seeds
Now Organic Steiva extract to taste
On the stove top in a pan large enough to hold 5 cups of frozen berries. Yes you need frozen, because the frost will turn into moisture as it defrosts which is needed for the chia gel to form. Turn your stove on medium heat and place a lid on the pan. Let the berries defrost and form a decent amount of liquid. This takes about 15-20 minutes.
Next, add in the chia seeds while turning down the heat to low. Stir frequently to prevent scorching. The chia seeds, liquid and berries will form your beautiful preserves. This takes about 5-10 minutes. Add stevia to taste.
Voila! There you have it! Easy peasy and super yummy!
I like to keep mine in pint size mason jars to keep watch on how much I am using or rather sneaking. 🙂
You can use this as jelly on your bread in a mug… or on a nice muffin in a mug… or in greek yogurt as a swirl… or on E pancakes. A true blue Trim Healthy Mama FP delight!
You did see this on my delicious Lemon Coconut Muffin in a Mug recipe.
You can definitely store this in the freezer, but I have no space as we are very stocked! So I just make it as I need it.
It is so easy, I do not feel like this makes more work for me! 🙂
*Where do I get my supplies? Costco! I will son be doing my Costco purchase post… a long time coming. I buy my berries and chia seeds there. I love Costco!
