This recipe came about because I was in desperate need of something chocolate, warm, Fuel Pull and filling.
I had recently discovered that I had all the necessary ingredients for the Cookie Bowl Oatmeal in Trim Healthy Mama. I had that in the refrigerator waiting for the morning.
I peeked. Sigh… It wasn’t even close to ready.
My thoughts rolled around in my head as my tummy rumbled and my eyes scanned the cupboards.
Then the idea popped in my head.
If I could use oats for a FP breakfast, why could I not use them for a FP snack?
So, I took my package of Gluten Free Oat Bran from Bob’s Red Mill and scanned the carbs. For 1/3 cup of GF Oat Bran it had 21 net carbs. Boil it down to one serving, it came out to be 4.5 net grams of carbs per tablespoon.
I used egg whites, stevia, a little peanut butter for flavor, some cocoa powder and a bit of oat bran and we now have yummy, easy cake, with no fancy ingredients!
*If you do not have oat bran, you can try this recipe with rolled oats, just make sure that your numbers stay in FP mode.
Oaty Chocolate Peanut Butter Cake in a Mug FP
Serves one, multiply for oven and family use
2 tbs. Gluten Free Oat Bran
1/2-1 tbs. Cocoa Powder (mine is low low carbs so this is literally just in FP mode)
2 egg whites, or 3 tbs. (equal to one egg)
1 flat tsp. of natural sugar free peanut butter
¼ – ½ baking powder (homemade or ¼ tsp baking soda with ½ tsp apple cider vinegar)
a pinch of salt
stevia to taste (I use NOW organic brand, appr. ¼ – ½ tsp for me)
1-2 tbs water
Mix all the ingredients in a large mug. Microwave for 1 to 1 ½ minutes. You may also bake in a ramekin in the oven for about 15 minutes at 350 degrees.
If you multiply the recipe for the whole family you can bake at the same temperature for about 20 minutes.
This recipe was perfect. It put me at the top of the numbers for both fats and carbs, which was just what I needed. Perfectly satisfying and energizing Fuel Pull snack.
You really don’t need any fancy topping or anything added to enjoy this… but know that IF you want to go that route you will end up with and E or S snack if you do additions.
