Can you imagine the Holidays with out Magic Cookie Bars or the yummy sweetness of sweetened condensed milk? Last year, I had to go without those wonderful treats. But this year is another story.
This recipe came about because I wanted to make a Trim Healthy Mama version of Magic Cookie Bars. Of course there are loads of recipe out there for sweetened condensed milk, but every one of them contain some form of sugar and most contain dairy. I am looking out for you mamas who want a choice! A better choice. 🙂
Knowing that it isn’t worth ruining my wasteline, I determined to come up with a suitable, rather a really great adaptation. I couldn’t believe how well this came out. Yeehaw!
- 2-13.5 oz cans of coconut milk (I used 1 full fat and 1 light, Kroger brand)
- 4 tablespoons of Truvia, or less if you are using THM Sweet Blend
- Place the ingredients in a small pan and bring to a light boil.
- Reduce heat to maintain a steady simmer.
- When reduced to about half, and thick like the store bought sweetened condensed milk, it is finished
It may take you less than 4 hours to make this depending on how much you double or triple the recipe, and even your altitude.
This makes just a little over 8 oz. of sweetened condensed coconut milk.
This took me 4 hours! I do live at 9,000 feet above sea level; that likely has something to do with it. Even with the length of time, it was well worth it. Those bars were amazing. You will see the recipe soon where I am participating in a cookie bonanza on Intoxicated On Life in November. All the recipes will be grain free and many will be on plan for Trim Healthy Mama as well. I promise I will link up that recipe to this one.

Quick Note: Sarah from Mrs. Criddle’s Kitchen thought this may be great in the crock pot. Yes, I say! I think it would be perfect, especially if you are making a large batch. You could easily freeze what you don’t use. Make sure that you check and stir often. I will do this on Friday to give you the details in another post 🙂
